Escoffier Dinner

Here we go!! Menu is set for Monday’s Escoffier Dinner. If you are not familiar with Auguste Escoffier, he is the grand-father of modern French cuisine. His recipe book is one of the most indispensable tools a chef can own and the book itself is just referred to “Escoffier” as in … “Hey you poor excuse for a line cook!! Stop cooking my scrambled eggs to within an inch of their life and grab Escoffier, reference 473 and 477. Do not come back into my kitchen until you can do it right!!” … I tried to keep that as clean as possible but I think we all know that an angry chef would sound a little … stronger ;-)
